Piernik – a Polish special chocolate cake

Chocolate cakes are the best, and piernik is a special one!

If we wanted to translate the word “piernik“, it would be “a gingerbread“. However,despite the spices, piernik has nothing to do with a traditional gingerbread or well-known brownie. It is made with cacao (although some people like adding melted dark chocolate) and is baked usually for Christmas.

Preparing the cake isn’t difficult and doesn’t demand any special ingredients. It is also a good dessert when your family pays you a visit or you just want to eat something sweet 🙂

Time: 1 hour 20 minutes

Ingredients

  • 2 eggs
  • 250g of sugar
  • 125g of melted butter
  • 2 tablespoon of honey
  • 400g of all-purpose flour
  • 1 teaspoon of baking soda
  • 4 tablespoon of cacoa
  • 1 glass of milk
  • 15 pack of gingerbread spices
  • 4 tablespoon of plum jam

Preparation

Start by adding eggs and sugar into a large bowl. Mix them until they are well-combined. In the mean time, melt the butter and let it cool on a windowsill.

Then, combine together flour, baking soda, pack of gingerbread spices and cocoa. Add to the bowl with a sugar-egg mixture and stir. Pour the milk. Stir again.

When the butter cools down, add it to the chocolate dough along with honey and plump jam. Mix again. Put the dough into a long cake tin. Put it to the preheated to 180C oven. Bake piernik for 60 minutes. When the cake is done, let it cools down.
