Eclair with Chocolate is an easy and go-to type of eclair. An eclair is a French pastry particularly popular with children but also with grown ups. Traditionally stuffed with chocolate, it is also available in many flavours: coffee, vanilla, pistachio, raspberry, etc. to satisfy all gourmets.

Recipe of Eclair with Chocolate

Ingredients

  • 200g of flour.
  • 210g of dark chocolate.
  • 25cl of water.
  • 30cl of milk.
  • 4 tablespoons of sugar.
  • 125g of butter.
  • 5 eggs.
  • 3 egg yolks.
  • Oil.
  • Salt.

Preparation

  • Prepare the choux pastry :
  • Preheat the oven to 210°C.
  • Mix 1 tablespoon of sugar, a pinch of salt, 75g of butter and 25cl of water in a saucepan. Boil.
  • Add 150g of flour and stir until the dough is compact.
  • Knead the dough to make it firm.
  • Add 4 eggs, one at a time, mixing well.

  • On an oiled baking sheet, form 10 sausages 15cm long.
  • Brush the sausages with an egg yolk.
  • Bake 25 minutes in the oven, then leave in the oven turned off for another 10 minutes.
  • Prepare the cream:
  • Melt 60g of chocolate pieces in the milk over low heat.
  • In a bowl, whisk an egg, an egg yolk and 3 tablespoons of the sugar.
  • Pour 2 tablespoons of flour and pour into the chocolate milk.
  • Stir until it thickens while leaving on the heat.
  • Remove from the heat and add 20g of butter. Stir.
  • Let it cool down.
  • Melt 150g of chocolate with 30g of butter using a water-bath.
  • Cut the éclairs lengthwise and garnish them with the chocolate cream.
  • Pour the melted chocolate on top.
  • Let the melted chocolate harden.
