Migas de Pan

Migas de Pan is a Spanish dish that it mainly composed of pieces of toasted breadcrumbs accompanied by meats and chopped vegetables.

Recipe of Migas de Pan

Ingredients

  • 500g of stale bread.
  • 300ml of water.
  • 1 teaspoon of salt.
  • 2 or 3 sausages.
  • 2 green bell pepper.
  • 3 slices of bacon.
  • 6 dried garlic cloves.
  • 100ml of olive oil.

Preparation

  • Crumble the bread.
  • In a container, put the water and pour in the salt and the bread. Stir and let stand 1 hour.
  • Cut the chorizo into slices.
  • Cook the chorizo in a large saucepan over medium heat until the chorizo is lightly golden. Remove the chorizo.
  • Cut the bacon into strips.
  • Add 100ml of oil in the sauce pan and brown the bacon with a pinch of salt. Remove the bacon.
  • Wash the green bell pepper and cut it into pieces or slices.
  • In the saucepan, cook the bell pepper et the garlic in the oil left by the bacon for 5 minutes. Remove the bell pepper.
  • Add the crumbs in the saucepan and cook until it’s toasted (from 20 to 30 minutes), stirring every few minutes.
  • Add the rest of the ingredients in the saucepan. Cook for a couple of minutes.
