The strawberry charlotte is a cake greatly appreciated in France and is easy to prepare. This cake made of ladyfinger biscuits is actually from England. It was created to pay homage to Queen Charlotte, George III’s wife.

Recipe of Strawberry Charlotte

Ingredients

  • 500g of ladyfinger biscuits.
  • 500g of strawberries.
  • 50g of blackberries.
  • 20cl of liquid fresh cream.
  • 150g of mascarpone.
  • 50g of icing sugar.

Preparation

  • Cover the inside of your mould with cling film.
  • Dip the bottoms of the ladyfingers in a little water and arrange them all around the mould.
  • Do the same by placing the ladyfingers at the bottom of the mould.
  • In a bowl, put the cream, mascarpone and icing sugar. Whisk quickly until the mixture is dense.
  • Wash and cut into pieces 300g strawberries.
  • Pour half of the cream.
  • Put the strawberries.
  • Pour the other half of the cream.
  • Cut the rest of the strawberries in half and place them on top of the cake.
  • Wash the blackberries and place them on top of the cake.
  • Sprinkle with icing sugar.
  • Take the cake out of the mould with the help of the cling film.
