Apple plumcake

Apples are largely used in cakes of all kinds. Strudel is the most famous above all of course, but it’s not the only way to taste this delicious fruit as a dessert.

Today I suggest you to prepare a very soft plumcake that will even make you happy to jump out of bed and run in the kitchen to have a slice for breakfast. This recipe doesn’t require cinnamon, but the combination of the two tastes like heaven, so if you like it, I recommend you to add it to the ingredients.

Ingredients:

  • 3 apples
  • 250 grams of flour
  • 140 grams of caster sugar
  • 100 ml of seed oil
  • 1 small jar of white yogurt
  • 3 eggs
  • 1/2 sachet of vanilla-flavoured baking powder
  • a pinch of salt

Preparation:

Peel the apples and cut them into small cubes. Put them in a solution made with water and lemon juice so that they don’t oxidise.

In a bowl mix together the eggs and the sugar, adding a pinch of salt, until the mixture looks aerated.

Add then the yogurt and the seed oil very gradually. Now add the flour and the baking powder, previously sifted.

Drain the apples, add them in the bowl, mix and put the mixture in a baking tin covered by baking sheet.

Put it in the oven at 180°C for about 40 minutes.

Let it cool down and add some icing sugar if desired.
