Taste Racuchy – Polish apple pancakes!

Racuchy or racuszki – however strange it sounds, this dish is loved by Poles… and not only.

Racuchy is a traditional Polish dish from the same family of foods as the crêpe and similar to American pancakes. The main ingredients are apples which can be grated or just cut into a thin slices and added to dough. Racuchy are usually served with icing sugar or cinnamon, but they taste delicious also with jam, yogurt or honey.

Time: 30-45 minutes

Serving: 10-12

Ingredients

  • 2-3 apples
  • 1 lemon
  • 1 tablespoon of honey
  • 3 eggs
  • 2 teaspoon of sugar
  • 50 g of butter
  • 170 g of all-purpose flour
  • 1 teaspoon of baking powder
  • 100 ml of milk
  • 3 tablespoon of yogurt
  • oil for frying

Preparation

Start with cutting the apples into thin slices. You can also grate them if you want another version.

Then, add eggs and sugar into a bowl and mix. Melt the butter into a small pot,
cool and add to the mixed eggs with sugar. Mix the ingredients.

Sieve the flour and baking powder to the dough. Stir delicately until it’s well-combined. Squeeze the lemon and add the juice to the bowl. Add yogurt, honey and apples. Stir.

Fry racuchy on the preheat pan with oil. Racuchy should be golden from each side.
Serve with icing sugar, yogurt or jam.
