Fideua – Spanish Paella with noodles

Do you know fideua?

Perhaps, you know paella. Fideua isn’t very different than this very popular dish in Spain. Fideua is paella, but instead of rice, it’s served with noodles. The name comes from the noodles, fideus,
which are used to prepare the dish.

Time: 1 hour

Serving: 4-5 people

Ingredients

  • 400g of fideus
  • 500g of clean squid
  • 2 cloves garlic
  • 20 ml of oil
  • 3 tomatoes
  • 1 teaspoon of sweet pepper
  • 1 teaspoon of hot pepper
  • 50 g of peas
  • 1 pinch of salt
  • 700 ml of fish stock

Preparation

Start with preheating the oven to 180°C. Toast the fideus until they turn a dark golden brown colour.

Then, put the stock on a very low heat. When it simmers, add to noodles. Heat the olive oil in a pan over a medium-low heat. Add garlic and cook slowly. When it’s golden brown, remove from the oil and discard.

Add the squid and cook it for around 3 minutes. Then, add the grated tomato, cooking for another 3 minutes. Then, add both peppers and salt and stir.

Finally, add the fideus and stir well to coat and add half of the warmed stock. Add peas.
Cook for 10 minutes.
