Fresh for the warm days – Avocado salad with watercress and bacon

Making a salad is not only fast, it is also a refreshing meal with this warm weather in Barcelona.

Avocado is packed with vitamins and minerals. The fruit is rich in vitamins B, C, E and K and contains a lot of magnesium, potassium, zinc, and iron. Although avocados contain a lot of calories and fat, they can still help you lose weight. The unsaturated fats and fibers in avocados give you a feeling of satiety so that you are less hungry again. You will, therefore, snack less quickly and eat less.

The combination of its low saturated fat content and high unsaturated fat content helps lower LDL cholesterol and keep HDL cholesterol in balance. Moreover, avocados help improve your insulin sensitivity and help prevent the antioxidants from inflammation. All in all, avocado is not only tasty but also super healthy!

Ingredients

  • 2 bunches watercress
  • 2 avocados
  •  1 tbsp mayonnaise
  • 2 tbsp cream
  • 1 tbsp grain mustard
  • 1 el balsamic vinegar
  • 100 g bacon cubes
  • 1 apple (in parts)
  • chili pepper (small, without seeds and finely chopped)

Preparations

Halve the avocados, remove the kernel and cut into cubes. Then make a dressing of the mayonnaise, the cream, the mustard and the balsamic. Then stir up some butter in a pan and fry the bacon cubes and the apple for about 5 minutes until the bacon is crispy and the apple golden brown. Stir 1 bunch of chopped watercress through the bacon cubes and the apple and remove the pan from the heat. Now start making the salad, start with a salad of 1 bunch of watercress and the chili pepper. Divide the watercress salad over the plates. Sprinkle with the avocado cubes. Spoon some of the dressing and sprinkle with the bacon strips, apple, and chopped watercress. Enjoy your meal!
