Simply Curried Cauliflower

This Simply Curried Cauliflower recipe developed by Simon Wood is only one of many ways to prepare this superfood, which can easily be replicated at home.

Ingredients

Curried Cauliflower Purée:

  • 1/2 teaspoon coriander seeds, whole
  • 1/2 teaspoon cumin seed, whole
  • 1 tablespoon mild curry powder
  • 1/2 large cauliflower
  • 1 garlic clove, minced
  • 25g butter
  • 150ml double cream
  • 1 pinch saffron

Cauliflower Crisp:

  • 4 thin slices of cauliflower
  • 25ml olive oil
  • sea salt

Roasted Cauliflower:

  • 1/4 large cauliflower

Cauliflower Couscous:

  • 1/2 large cauliflower
  • micro coriander

Method

For the curried cauliflower purée…

In a large saucepan gently toast the coriander and cumin seeds to release their flavours. This will only take a couple of minutes. Place them in a pestle and mortar, and crush into a powder. Add in the curry powder and mix well. 

Take 1/2 the cauliflower and cut it into chunks. Add to the saucepan with the garlic, butter, cream, half of the spices and the saffron. Cook gently until softened and then blitz in a food processor until smooth. 

For the cauliflower crisp…

Preheat the oven to 190 degrees. Use a sharp knife and, as thinly as possible, shave a thin sliver of cauliflower for each person. Take a baking tray, layer the cauliflower between two pieces of baking paper. Brush it with a little oil and season with sea salt. Top with another tray and bake in the oven until crisp and golden.

For the roasted cauliflower…

Turn the oven up to 200 degrees. Take the 1/4 of cauliflower and cut into even sized chunks and add to a bowl with the rest of the spices and olive oil. Mix well and roast in the oven for 15 minutes. 

For the cauliflower couscous…

Take the rest of the cauliflower, and blitz in a food processor until it has a couscous style texture. Use this to finish your dish with a touch of micro coriander.
