Frozen treat: Red berry iced tea popsicles

Summer already kicked in with those high temperatures and homemade popsicles are a way to keep cool.

Popsicles are refreshing yet require little to no effort to make.  A scoop of ice cream on a summer day is the more obvious choice, but popsicles are lighter.  You  can store them in the freezer and enjoy one or two whenever you wish. Being prepared for summer’s high temperatures will be easier and you will get plenty of benefits from the berries such as vitamins, antioxidants and fibers. 

 

Ingredients

  • 600ml of filtered water
  • 2 Tablespoons of dried rosehips
  • 1 tea bag of raspberry leaf tea
  • 180g strawberries, thinly sliced (divided use)
  • 180g raspberries, halved (divided use)
  • 66ml raw honey
  • 10 capacity popsicle mold and sticks

Preparations

Bring water to a boil in a medium saucepan. Turn off heat and add rose hips, tea bag and half the strawberries and raspberries. Cover and let steep 20 minutes. Strain through a fine mesh strainer pressing firmly on solids. Stir in honey. Pour tea half way up popsicle molds and add remaining sliced fruit to molds. Top off molds with the rest of the tea and add popsicle sticks. Freeze until solid
