Cheese Ravioli

Recipe of Cheese Ravioli

Ingredients

  • 300g flour
  • 4 eggs
  • 1 tablespoon of olive oil
  • 100g grated parmesan cheese
  • 300g fresh goat cheese
  • 1 bunch of chives
  • Salt and pepper

Preparation

  • Mash the goat cheese with a fork.
  • Add the parmesan cheese, 1 egg and the chopped chives. Stir.
  • Put in the fridge.
  • In a bowl, mix 3 eggs with the flour and a pinch of salt until the dough is smooth.
  • Shape the dough into a ball, wrap in plastic and let stand for 30 minutes.
  • Cut the dough in 3 and roll out lengthwise.
  • Cut the dough pieces in half in the middle.
  • Place small piles of stuffing on half of the dough, spacing them evenly.
  • Cover with the other half.
  • Weld the edges with a little water.
  • Cut the ravioli.
  • Boil some water.
  • Cook the ravioli for 2 to 3 minutes in water.
