Recipe of Artichoke-Lettuce Soup
Ingredients
- 1,5L of chicken broth.
- 2 potatoes.
- 2 lettuces.
- 2 onions.
- 50g of butter.
- 20cl of cream.
- 2 egg yolks.
- 450g of artichokes bottoms.
- Nutmeg, salt and pepper.
Preparation
- Clean the salad, remove the hearts and cut the leaves.
- Peel and chop the onion.
- Take a large artichoke stock, cut it into small cubes.
- Cook the artichoke in a casserole dish with butter for 1 minute.
- Drain, rinse and cut the other artichoke bottoms into strips.
- Place the remaining butter, onion, artichoke lettuce strips and potatoes in the casserole dish.
- Stir a little.
- Add the hot broth and cook for 10 minutes, covered.
- Pour everything in a blender and add pepper and salt. Blend it.
- Mix the egg yolks with the cream and nutmeg.
- Pour the mixture with the soup and mix.
- Serve the soup bowls and top with the cubes of artichokes and lettuce hearts.
