Recipe of Artichoke-Lettuce Soup

Ingredients

  • 1,5L of chicken broth.
  • 2 potatoes.
  • 2 lettuces.
  • 2 onions.
  • 50g of butter.
  • 20cl of cream.
  • 2 egg yolks.
  • 450g of artichokes bottoms.
  • Nutmeg, salt and pepper.

Preparation

  • Clean the salad, remove the hearts and cut the leaves.
  • Peel and chop the onion.
  • Take a large artichoke stock, cut it into small cubes.
  • Cook the artichoke in a casserole dish with butter for 1 minute.
  • Drain, rinse and cut the other artichoke bottoms into strips.
  • Place the remaining butter, onion, artichoke lettuce strips and potatoes in the casserole dish.
  • Stir a little.
  • Add the hot broth and cook for 10 minutes, covered.
  • Pour everything in a blender and add pepper and salt. Blend it.
  • Mix the egg yolks with the cream and nutmeg.
  • Pour the mixture with the soup and mix.
  • Serve the soup bowls and top with the cubes of artichokes and lettuce hearts.
