Fish and Chips

So simple, so delicious –  quick and easy  dish from England

Malzemeler

  • 4 large Russet potatoes
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 cup milk
  • 1 egg
  • 250 ml vegetable oil for frying
  • 750 g cod (also can be used tilapia o pollock) fillets

Hazırlık

  1. Peel potatoes and halve lengthwise, then cut lengthwise into 3-4 cm thick wedges.
  2. Put the potatoes in a large bowl of ice and cold water and let them for 30 minutes.
  3. In a separate medium-size mixing bowl, mix together flour, baking powder, salt and paper.
  4. Stir in the milk and egg. Stir until the mixture is smooth and then let it for 20 minutes.
  5. Heat oil in a deep heavy pot over high heat until it reaches 320 degrees.
  6. Drain potatoes thoroughly with paper towels, removing any excess water.
  7. When oil reaches 320 degrees, submerge the potatoes in the oil and working in small batches, fry for 3-4 minutes until they are pale and floppy.
  8. Remove oil from heat and reserve.
  9. Drain and cool the potatoes to room temperature (around 20-25 minutes).
  10. Increase the temperature of the oil again till it reaches 350 degrees.
  11. Fry again the potatoes in 3 batches until crisp and golden brown (about 2-3 minutes) and then remove and drain on roasting rack.
  12. Season with salt while hot and hold in the oven.
  13. Dredge the fish in the batter, one piece at a time, and place them in the hot oil.
  14. Fry until the fish is golden brown and then drain well on paper towel.
  15. Serve with malt vinegar and English joke 🙂
