Recipe of Zucchini and Carrot Medallions:
Ingredients:
• 2 Zucchinis
• 2 Carrots
• 6 Bacon slices
• Cheese
• 3 Eggs
• Salt and seasonings (oregano, provençal herbs and chimichurri)
Procedures:
• Place the grated zucchini and carrot in a bowl.
• Slice the cheese and bacon in small pieces.
• Add the seasonings according to desired taste.
• Beat the eggs and add to the previous mixture.
• Season and form like medallions.
• On a baking tray, place parchment paper and a little olive oil.
• Put the medallions separating it from one another.
• Put it in the oven of 180° for about 20 minutes.
• Wait to cook until golden brown.
