Recipe of Ratatouille
Ingredients
- 350g of eggplant.
- 350g of zucchini.
- 500g of tomatoes.
- 350g of bell pepper.
- 3 cloves of garlic.
- 6 tablespoons of olive oil.
- 1 sprig of thyme.
- 350g of onions.
- 1 bay leaf.
- Salt and pepper.
Preparation
- Cut the tomatoes into quarters. Then the eggplant and zucchini into slices.
- Cut the bell peppers into strips.
- Chop the onion.
- Heat 2 tablespoons of oil in a pan.
- Cook the onions and bell peppers.
- Add the tomatoes, chopped garlic, thyme and bay leaf.
- Simmer 45 minutes.
- Cook the eggplant and zucchini with the rest of the oil in a pan for 15 minutes.
- Put the eggplant and zucchini with the tomatoes and cook for 10 minutes over low heat.
