Check out this easy recipe for Croquettes

Crispy yet creamy, croquettes are popular worldwide, both as a fast food and as a delicacy. They are easy to make and you can create your own filling with mushrooms, vegetables, cheese, fish, ground meat… Here’s our favorite recipe!

Ingredients 

  • 4 cups (1,3kg) mashed potatoes
  • 3 tablespoons all-purpose flour
  • 2 egg yolks, beaten
  • 1 egg, beaten
  • 2 tablespoons milk
  • 1/2 teaspoon chopped green onion
  • 1/2 teaspoon pepper
  • Sifted dried bread crumbs
  • Peanut oil, enough to fill pan 1/2-inch
  • Salt

Directions

  1. Add beaten egg yolks, chopped onion, milk, salt, pepper, and flour to the mashed potatoes.
  2. Chill and then shape using an ice cream scoop.
  3. Dip in the beaten egg, then roll through bread crumbs.
  4. Fry each croquette in shallow oil until brown on all sides.
  5. Cook in small batches, giving each croquette at least 2” (5cm) of space around it to not overcrowd the pan. This prevents the croquettes from crumbling while frying.
  6. You can mix your croquettes with brown or béchamel sauce, it will taste even more delicious!
