Crispy yet creamy, croquettes are popular worldwide, both as a fast food and as a delicacy. They are easy to make and you can create your own filling with mushrooms, vegetables, cheese, fish, ground meat… Here’s our favorite recipe!
Ingredients
- 4 cups (1,3kg) mashed potatoes
- 3 tablespoons all-purpose flour
- 2 egg yolks, beaten
- 1 egg, beaten
- 2 tablespoons milk
- 1/2 teaspoon chopped green onion
- 1/2 teaspoon pepper
- Sifted dried bread crumbs
- Peanut oil, enough to fill pan 1/2-inch
- Salt
Directions
- Add beaten egg yolks, chopped onion, milk, salt, pepper, and flour to the mashed potatoes.
- Chill and then shape using an ice cream scoop.
- Dip in the beaten egg, then roll through bread crumbs.
- Fry each croquette in shallow oil until brown on all sides.
- Cook in small batches, giving each croquette at least 2” (5cm) of space around it to not overcrowd the pan. This prevents the croquettes from crumbling while frying.
- You can mix your croquettes with brown or béchamel sauce, it will taste even more delicious!
