After few weeks the Easter will come and that is why today’s post is … to give you some time to become chefs of “Folar de Chaves”.
Folar is traditional Portuguese bread typically served at Easter. Folar de Chaves is originally from the north-eastern Portuguese regions of Chaves and Valpaços. This bread is stuffed with “chouriço” (chorizo) and “presunto” (ham) which make it so tasty.
Ingredients
- 8 cups flour
- 10 eggs + 1 for brush the bread in the end
- 2 teaspoons instant yeast
- One knob of butter
- 1 cup water
- 100-150ml olive oil
- 2 chorizo sausages, chopped (around 500g)
- 100g chopped ham
- 200-250g chopped bacon
- Half teaspoon sugar
- Salt on taste (recommended 2 teaspoons)
Preparation
- Mix milk, sugar, salt and yeast in a big bowl and then leave for 15-20 minutes until it grows.
- After that mix eggs with the yeast mixture then add flour, butter and olive oil.
- Beat the mixture until homogeniety and place the dough in a bowl, cover it and let to rise for one hour and half.
- Once done, transfer the dough onto a floured surface and roll out to 20cm wide and around 5cm thick.
- Lay chorizo first on top of the dough and then add bacon and ham.
- Roll the dough into a loaf with each layer having some of the meat.
- Press the dough while rolling to prevent any bubbles or spaces between the layers.
- Add the dough to a loaf pan and spread olive oil to make sure it doesn’t stick.
- Leave the dough, covered with towel, to rest for 30 minutes until it rise little bit.
- Brush the top of the dough with an egg.
- Then bake in a preheated oven at 250 degrees for about 40 minutes to an hour until become golden brown.
- Once done, remove from the oven and let it sit for 15 minutes to cool off and then serve.
