Discover Folar de Chaves, a traditional Portuguese bread served at Easter

Easter if approaching and today’s post will give your the opportunity to test your cooking skills with the Folar de Chaves.

Folar is a traditional Portuguese bread typically served at Easter. It’s originally from the north-eastern Portuguese regions of Chaves and Valpaços. This bread is stuffed with chouriço (chorizo) and presunto (ham), and it’s a delight!

Ingredients

  • 8 cups flour
  • 10 eggs + 1 for brush the bread in the end
  • 2 teaspoons instant yeast
  • One knob of butter
  • 1 cup water
  • 100-150ml olive oil
  • 2 chorizo sausages, chopped (around 500g)
  • 100g chopped ham
  • 200-250g chopped bacon
  • Half teaspoon sugar
  • Salt depending on your taste (recommended 2 teaspoons)

Directions

  1. Mix milk, sugar, salt and yeast in a big bowl and then leave for 15-20 minutes until it grows.
  2. After that, mix eggs with the yeast mixture then add flour, butter and olive oil.
  3. Beat the mixture until homogeneity and place the dough in a bowl, cover it and let to rise for one hour and half.
  4. Once done, transfer the dough onto a floured surface and roll out to 20cm wide and around 5cm thick.
  5. Lay chorizo first on top of the dough and then add bacon and ham.
  6. Roll the dough into a loaf with each layer having some of the meat.
  7. Press the dough while rolling to prevent any bubbles or spaces between the layers.
  8. Add the dough to a loaf pan and spread olive oil to make sure it doesn’t stick.
  9. Leave the dough, covered with a towel, to rest for 30 minutes until it rise a little bit.
  10. Brush the top of the dough with an egg.
  11. Then bake in a preheated oven at 250 degrees for about 40 minutes to an hour until become golden brown.
  12. Once done, remove from the oven, let it sit for 15 minutes to cool off and then serve.
