Sole Meunière is a typical French fish dish. A whole sole is preferably used, but it is also possible to simply use sole fillets. It is usually served with steamed potatoes but also with rice or pasta.

Recipe of Sole Meunière

Ingredients

  • 4 soles.
  • 50g of flour.
  • 50g of butter.
  • 2 tablespoons of oil.
  • 1 lemon.
  • Salt and pepper.

Preparation

  • Remove the brown skin from the soles.
  • Flour the sole and add salt and pepper on both sides.
  • Heat the oil in a pan.
  • Once the oil is hot, place the soles in the pan.
  • Once the side is brown, the sole over.
  • Remove the soles from the heat and degrease the pan.
  • Return the pan to the heat and melt the butter.
  • Place the sole on the pan. Pour the lemon juice over the sole.
  • Serve directly.
