Rum baba

Rum baba is a cake soaked in rum syrup. It would be inspired by the Polish babka cake imported in France by King Stanislas in the 18th century.

Recipe of Rum Baba

Ingredients

  • 120g of flour
  • 150g of powdered sugar
  • 3 eggs
  • 1 sachet of yeast
  • 3 tablespoons of milk
  • 25cl of water
  • 10cl of rum
  • 50g of butter
  • 25cl of cane sugar syrup

Preparation

  • Preheat the oven to 180 ° C.
  • Separate the egg whites and yolks.
  • Whisk the egg yolks with the sugar until the mixture turns white.
  • Add the hot milk, melted butter, flour and baking powder while whisking.
  • Beat the egg whites with a pinch of salt.
  • Mix them with the dough.
  • Pour the dough into a buttered mould.
  • In a saucepan pour the cane sugar syrup, water and rum and mix over low heat to make a syrup.
  • Drizzle the baba with the syrup until completely absorbed.
