Ramen has been a staple food already particularly in Japan but it has even travelled around the world and experienced different variations based on the culture of the countries that adapt to it. It is a perfect dish whenever it is cold or rainy or simply when you feel like watching a movie or even an anime. Ramen can truly accompany and fill you up in every situation!

Recipe of Ramen:

Ingredients:

BROTH:
– 1 bok choy
– 2/3 Carrots
– 1 chicken carcass
– 1/4 of Ginger
– 1 teaspoon of Mirin
– 1 teaspoon salt

MARINADE:
– 20cl Soy
– 20cl White wine or Sake
– 1 piece of Ginger (2cm)
– 20cl Mirin

TOPPINGS:
– 1 piece of bacon (3 inch thick with more meat than fat)
– 2 Portobello Mushrooms
– 1 Chives
– 1 handful of Chinese mushrooms
– Dried udon noodles
– 1 egg

Procedure:

• Prepare the broth. Put all the ingredients in a pot with water and cook for 1 hour (30 min only if in a pressure cooker).
• Cook the bacon in a pan (without oil). When it is golden brown, add it to the broth.
• Boil a water and once it is boiling, add the egg and let it cook for 6 minutes.
• Remove the egg and put it in a bowl with ice to stop the cooking.
• Prepare the marinade. Put all the ingredients in a saucepan and bring it to a boil. When it boils, leave it for 5 minutes and remove.
• When the marinade is cool, add the peeled egg and remove the bacon from the broth and add it. Let it marinate for at least 1 hour.
• When everything is done, cook the noodles. Put a pot with water and once it boils, add the noodles. In 5 minutes it will be ready.
• Cut the mushroom into slices and saute it in a pan with a bit of broth. Repeat the same with the Chinese mushrooms.
• Start plating. Put a teaspoon of the marinade sauce in the bottom of the plate, add the noodles and stir. Next is the broth.
• Top with bacon, egg, mushrooms and two pieces of bok choy that we made with the broth.
