Galette bretonne with warm goat cheese, honey and walnuts


A galette (Breton Krampouezhenn) is a buckwheat pancake from Brittany. This delicious recipe, that mixes sweet and salty, is easy to prepare. Perfect to share with friends!

Ingredients for 6 persons:

pancake batter:

  • 250ml half-skimmed milk
  • 60g sweet butter
  • 1 egg
  • 70g wheat flour
  • 55g buckwheat flour 
  • 2 pinches of fine salt

filling:

  • 150g goat cheese
  • 60g of honey
  • 30g walnuts
  • 60g sweet butter
  • pepper 

Preparation:

For the pancake batter:

Mix the flour and salt in a bowl.
Add the egg and milk as you whisk the batter.
Melt the butter and add to the rest of the mixture.
Refrigerate for 1 hour.
Last but not least bake the pancakes in a pan until they turn golden brown.

For the filling:

Cut the goat cheese into pieces (4 pieces per pancake).
Melt 10g of butter in the pan and bake the first pancake.
Put 4 slices of goat cheese onto the pancake. Once the cheese has melted, fold the pancake.
Drizzle the honey, pepper and walnut kernels over it.
Repeat this process for the last 5 pancakes.
