Courgette Carrot Pancakes

Here is a healthy recipe if you don’t know how to eat your vegetables or want something easy then this recipe is for you. An alternative to pancakes, some nice savoury vegetable pancakes.

Ingredients

  • 2 grated courgette (zucchini)
  • 3 grated carrots
  •  1 green onion, sliced
  • 1 tablespoon of chopped parsley
  • 2 eggs beaten (you can use more if necessary)
  • 1 cup (340 grams) of flour
  • 1 tablespoon baking powder
  • 1 teaspoon of salt
  • Olive oil for frying
  • Greek yogurt or sour cream (optionnal)

Preparation

Grate the courgette and place in in mesh strainer with a bowl below to get the zuchhini rid of the water. Sprinkle some salt on it and set aside for 10 minutes.

In the meantime, grate the carrots, and prepare all the ingredients (except the olive oil) and place them in a bowl.

Using your hands squeeze the courgette to drain of excess water. Put the grated courgette with the other ingredients and combine.

Heat a skillet on medium-high heat and pour olive oil in it. Scoop some mixture in your hand (depending on the size of pancakes you are looking for) and press gently in the skillet using a spatula to give it the shape of a pancake (you can also shape the pancake with your hands).

Fry the pancake until golden-brown, about 3-4 minutes on each side.

Once all the pancakes are done you can serve them with sour cream of greek yogurt.
