Braised chicken with Odika sauce

I’m going to make you travel in Africa, specifically in Gabon with a simple and delicious recipe that will seduce, for sure, children and adults. The main ingredient may require you to go in “specialized” stores.

The Odika is a sauce made from the fruit of acacias that looks like a wild mango with cocoa taste. Called the ‘native chocolate’, seeds are cooked. Once warm they are pounded. Then, it forms a compact block which can be stored easily, so just grate it to make the famous chocolate sauce.

Back to our recipe. To achieve it, you need:

  • 1 chicken,
  • Grated Odika (of course!),
  • 1 onion,
  • 2 garlics,
  • 1 stock cube,
  • 2 chilis,
  • Oil, preference to peanut one,
  • And sea salt.

About the chicken, some prefer it braised but you can pretty much cook it as you wish. In short, one imperative: it must be cooked in advance.

Then cut finely the onion and garlic and brown it in a pan with a drizzle of oil. Add the grated Odika and stir in for about 3 minutes.

The next step is to add the equivalent of 3 to 4 glasses of water, add the stock cube and the previously washed chili. Finally add a few pinches of salt into the solution. Stir in a little and close to simmer 15 to 20 minutes. Once the sauce seems consistent, put the chicken into it. The dish is ready!

It may be served with plantain banana cooked steamed or fried, rice or cassava.
