Tricolor sopes

Something great about Mexican culture is that its dishes are very colorful, a great example of this is the tricolor sopes, not to mention how delicious they are, you’re also able to serve them as breakfast and leave everyone satisfied.

Ingredients:

1 avocado

1 Chile serrano

3 green tomatoes

1/3 onion chopped

2 tomatoes

2 hydrated guajillos

1 clove garlic

1/2 teaspoon oregano

1 cup of refried beans

2 cups threaded chicken

1 cup of shredded lettuce

1 cup double cream cheese

1/2 cup of cream

12 sopes (you can make them by hand or buy them already made)

Ingredients for sopes:

2 cups of flour dough

2 teaspoons oil

1 teaspoon salt

1 cup of water

Preparation:

To prepare the sopes from 0 you must mix the flour with the oil and salt, little by little add the water and knead until you get the consistency of a dough. Put the pan over high heat and once you’re ready to start cooking the sopes put the flame on medium heat. Meanwhile the pan is heating, make balls with the dough and place it between two pieces of plastic, then with a plate with a flat bottom, press until you get a circle as thick as a tortilla. Put each circle in the pan until you see that it is dry on the top, turn it over and leave it like that until it cooks well, when you see is ready take it out quickly, begin to fold the edges inwards being careful not to burn yourself and repeat the same procedure with the others until you have the amount of sopes you’d like.

For the red sauce, roast the tomatoes and blend them with the garlic, guajillo and oregano, add salt and pepper as much as you’d like and put it aside for later.

For the green sauce, blend the serrano pepper together with the avocado and tomatoes, at the end mix the onion, salt and pepper, put it aside for later.

To finish spread the beans on the sope, place some chicken on top put the lettuce, cheese and cream cheese, once ready bring the sauces to the table, put a little and they are ready.
