Ingredients

  • 6-8 Greek pita bread
  • 800g pork tenderloin cut into 3,5cm cubes
  • 1/4 cup (56ml) extra virgin olive oil
  • 4 garlic cloves
  • 1/2 tablespoons dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon hot pepper flakes
  • 1/4 cup (56ml) lemon juice
  • 1 cup (250g) Tzatziki sauce
  • 1 medium onion, sliced thin (optional)
  • 1/2 cup (15g) chopped parsley (optional)
  • Tomatoes (optional)

Directions

  1. Cut tenderloin into bite-size chunks and put into a Tupperware with garlic, lemon juice, oregano, oil, salt, and pepper.
  2. Put in the fridge and forget for a day (this step is important if you want your Souvlaki to taste even more delicious, but it’s not absolutely necessary).
  3. When preparation is ready, thread meat onto skewers, place on foil-lined baking sheet and brush with marinade before grilling it. Leave little spaces between the pieces.
  4. Preheat a griddle pan or grill over high heat, and cook for about 8-12 minutes, turning occasionally until all sides are done.
  5. To prepare the pita, lay a pita in your flat palm, take a skewer of meat and place it in the center of the pita, then throw a good dollop of Tzatziki, some parsley, top with some spices, add small slices of onion and tomato, a drizzle of extra virgin olive oil and a good squeeze of a lemon juice.
  6. Roll sandwich up by squeezing your palm and enclosing neatly with the foil.

Be careful when eating it, it’s juicy!
