Portugese Custard Tarts

For the pastry lovers here is a delicious and traditional Portugese recipe, the Portugese custard tarts also known as Pastel de nata.

Ingredients:

  • 1 1/3 cups (270 grams) of caster sugar
  • 1/2 cup (160 ml) of water
  • 1 cinammon stick
  • 1 cup (250 ml) of milk
  • 1/2 cup (150 ml) of double cream
  • 4 egg yolks and 1 whole egg
  • 2 tablespoons of vanilla extract
  • 1/4 cup (30 grams) of corn flour
  • 18 oz (500 grams) of puff pastry

Preparation

Pre-heat oven to 425°F / 220°C.

In a pan place the sugar, water and cinammon stick. Simmer for 3 minutes and set aside.

In a sauce pan combine milk and double cream and cook on medium heat. Bring them to boil then set aside.

In a large bowl, add the egg yolks, vanilla extract and corn flour. Whisk until fully combined so no lumps remain.

Add little by little the milk and double cream to the egg mixture, then whisk thoroughly, return the mixture to the saucepan.

Place the saucepan over a low-medium heat while continually mixing.

Remove the cinammon stick from the sugar and water, then slowly pour the sugar and water in the custard sauce.

On a work surface lightly flour and cut the puff pastry in 12 equal pieces.

Grease a muffin tin and put each piece of puff pastry in the muffin holes. Push the pastry so it is evenly distributed.

Pour the custard in each muffin hole. Bake for 16-20 minutes until golden brown.

Dust some icing sugar on the top and serve them warm.
