Pineapple

Pineapple is said to originate from the area between southern Brazil and Paraguay in South America.

Christopher Columbus brought pineapples back to Europe after an expedition to South America. Because the fruit was rare in the United States, pineapple was served only on special occasions, so it became a symbol of hospitality. Nowadays people can get the fruit in almost every grocery store.

One can find many fresh pineapple recipes including desserts, smoothies and dinners with a fruity, pineapple additions but here is only one example of a recipe that includes pineapple, a pineapple cake.

Preparation time: 30 min

Cooking time: 1 hour

Ingredients

  • 2 cups of flour
  • 2 cups white sugar
  • 2 eggs
  • 2 tsp baking soda
  • 1 tsp vanilla extract
  • 1 can (20 ounch) crushed pinapple with juice
  • 1 package (8 ounch) cream cheese
  • ½ cup butter
  • 1 ½ cups confectioners´sugar
  • 1 tsp vanilla extract

Instructions

Preheat oven to 175 degrees C. Mix together the flour, sugar and baking soda. Next add eggs, vanilla and pineapple with its liquid from the can to the mixture and blend it well. Bake for 45 min or until a stick that is put in the center of the cake comes out clean.

To make the frosting combine in a bowl cream cheese, butter, confectioners sugar and 1 tsp of vanilla and beat until its creamy. Spread the frosting on warm cake.
