Pierogis : Polish dumplings

Here is a recipe given by my Polish friend and approved by all. Pierogis a what we could call Polish dumplings or raviolis. They can be sweet or savoury and the options in filling vary from strawberries, cheese, mushrooms, spinach, minced beef, mashed potatoes, etc.

Ingredients

  • Dough
  • 350 gr flour T.55
  • 1 egg
  • 1 teaspoon of salt
  • 50 gr butter, softened
  • 20 cl water
  • Filling
  • 225 gr feta cheese (or other type of cheese)
  • Spinach

Preparation

For the dough

In a bowl, combine the flour and salt, add the egg and combine well. Add the butter (must be soft) and just enough water until the dough becomes homogeneous.

Knead the dough using your hands, roll it in a ball and cover it with a plastic film. Let the dough rest during 30 minutes.

For the filling

Cook the spinach, then combine the cheese and the spinach together.

Divide the dough in two or three balls and using a rolling pin shape it so it is very thin.

Using a glass or a cookie cutter, cut the pierogis in round shapes.

Fill each pierogis with some filling. Seal them using some egg white or water and then a fork.

In a pan pour some water and heat until it is simmering, put the pierogis in the water. When the pierogis reappear on the surface it means they are cooked.

Add some butter in a skillet and cook the pierogis until they are golden.
