Here is a nutritious and very healthy recipe: zucchini stuffed with minced meat.
Recipe of Zucchini stuffed with minced meat
Ingredients:
- 2 zucchini
- 1 small onion
- 1 garlic clove
- 400g minced meat
- 200g natural crushed tomato
- Oregano and basil to taste
- 70g grated Emmental cheese (or other)
Preparation:
- Preheat the oven to 200ºC.
- Wash the zucchini, cut them from top to bottom in half and make cuts in the inside of the zucchini for better cooking.
- Place the zucchini on a baking sheet and bake until tender (about 15 minutes).
- Carefully empty the zucchini with a spoon and set aside.
- Chop the onion finely and sauté in a non-stick frying pan with the finely chopped garlic until done.
- Add the minced meat, the inside of the zucchini, and sauté until it takes color.
- Add the crushed tomato and spices to taste, stir well and let reduce over medium heat.
- Stuff the zucchini, add a little grated cheese on top; bake for 5 more minutes and ready!
