Basque Chicken

Basque chicken is a specialty of French cuisine, coming from the Basque country. It is a dish in the colors of the Basque region: red, white, green.

Ingredients

  • 1kg of tomatoes.
  • 700g of bell peppers.
  • 3 cloves of garlic.
  • 20cl of white wine.
  • 6 tablespoons of olive oil.
  • 1 chicken cut into 6 pieces.
  • 3 onions.
  • Salt and pepper.

Preparation

  • Chop the onions and garlic. Cut the tomatoes into pieces. Cut the peppers into slices.
  • In a saucepan, heat 4 tablespoons of oil. Brown the onions, garlic and bell peppers. Cook for 5 minutes.
  • Add the tomatoes, salt and pepper. Cover and cook for 20 minutes.
  • In a pan, brown the chicken in the oil. Add salt and pepper.
  • Add the chicken to the vegetables with the white wine, cover and cook for 35 minutes.
