Basque chicken is a specialty of French cuisine, coming from the Basque country. It is a dish in the colors of the Basque region: red, white, green.
Ingredients
- 1kg of tomatoes.
- 700g of bell peppers.
- 3 cloves of garlic.
- 20cl of white wine.
- 6 tablespoons of olive oil.
- 1 chicken cut into 6 pieces.
- 3 onions.
- Salt and pepper.
Preparation
- Chop the onions and garlic. Cut the tomatoes into pieces. Cut the peppers into slices.
- In a saucepan, heat 4 tablespoons of oil. Brown the onions, garlic and bell peppers. Cook for 5 minutes.
- Add the tomatoes, salt and pepper. Cover and cook for 20 minutes.
- In a pan, brown the chicken in the oil. Add salt and pepper.
- Add the chicken to the vegetables with the white wine, cover and cook for 35 minutes.
