Salmon burger with spinach

After showing you the broccoli vegan burger, it’s about time to discover the recipe to make another one with fish instead.

It’s easy to make and a really good way to try a new way of cooking salmon. This is a light and healthy recipe too!

INGREDIENTs:
  • 100 grams of fresh salmon fillet
  • 1 tbsp of bread crumbs
  • 1 egg white
  • 180 grams of spinach
  • chives
  • parsley
  • extra virgin olive oil
  • salt and pepper
  • lemon juice and peel
PREPARATION:

Boil some salted water and let spinack cook for about 5 minutes, then drain and put aside.

Pre-heat the oven at 200°C cut the salmon into pieces, removing spines eventually.

Blend the salmon in a mixer until it looks omogeneous, then add the beaten egg white, salt, pepper, the lemon peel chopped parsley and chives and then bread crumbs. Mix well.

Shape the burger and put it on a oiled baking tin.

Put the burger in the oven for about 15 minutes or until it browns. In the meanwhile, flavor the spinach with some lemon juice, oil, salt and pepper and serve along with the burger.
