Quiche Lorraine is a delicious, open-faced pastry crust with a filling of savory custard with cheese, onion and bacon. You can also find other types of Quiches, with meat, cheese, seafood or vegetables.
Quiches can be served hot or cold. They’re part of French cuisine but they’re also popular in other countries, particularly as party food. In France, you can find Quiches in every boulangerie* and French people love to have a Quiche for lunch!

Ingredients
For the pastry:
- 265g plain flour
- 1 egg yolk, lightly whisked
- 2 teaspoons iced water
- 180g chilled butter, chopped
For the pastry:
- 100g gouda cheese, grated
- 200g middle bacon rashers, trimmed, cut into batons
- 1 large brown onion, finely chopped
- 8 eggs
- 1/2 cup (120g) pure cream
- Salad, to serve
Directions
For the pastry:
- Place flour and 150g of butter in food processor and process until it resembles fine breadcrumbs.
- Add egg yolk and water and process until dough starts to come together.
- Turn dough onto lightly floured surface. Knead until smooth. Shape into a disc.
- Refrigerate for 30 minutes.
- Preheat oven to 210°C fan-forced. Place baking tray in the oven. Lightly grease 5cm-deep, 22cm (base), loose-based fluted flan tin.
- Roll pastry out between 2 sheets of baking paper until 2mm thick.
- Line base and sides of prepared tin, trimming excess. Line pastry case with baking paper. Fill with ceramic pie weights or uncooked rice. Place on baking tray.
- Bake for 20 minutes. Remove weights or rice and paper. Bake for a further 5 minutes or until pastry turns golden.
For the filling:
- Melt remaining butter in large frying pan over medium heat.
- Add onion and bacon. Cook, stirring, for 5 minutes or until bacon is golden and crisp and onion has softened. Transfer mixture to a bowl. Set aside for 10 minutes to cool.
- Reduce oven temperature to 170°C fan-forced.
- Spoon bacon mixture into pastry case. Sprinkle with cheese. Whisk eggs and cream together in a bowl. Pour over bacon mixture. Season with salt and pepper.
- Bake for 45 minutes or until set.
- Stand for 5 minutes. Serve with salad.
