Patatas Bravas is а dish typically served in restaurants and bars throughout Spain. If you’ve already tried Patatas Bravas, you know how delicious it is, and today, we’re sharing the secret recipe of this tasty dish with you.
Ingredients
For the sauce:
- 2 gloves garlic, finely chopped
- 1 can chopped tomatoes (without sauce)
- 1 small onion, finely diced
- 175g mayonnaise
- 3 tablespoons olive oil
- 1- 1 1/2 smoked sweet paprika (pimenton)
- 1 tablespoon tomato pureé
- Chilli powder (as much as you want) – recommended 1 pinch
- Pinch sugar
For the potatoes:
- 900 g potatoes
Directions
- Heat oil in a pan, add onion and fry until softened (for about 5 minutes).
- Add mayonnaise, garlic, tomato puree, tomatoes, chili powder, paprika, sugar and salt and bring to boil, stirring.
- Simmer for 10 minutes until pulpy.
- Scrape mixture into a bowl, cover and leave in the fridge for 30-60 minutes to allow flavors to meld.
- Heat oven to 200°C.
- Cut potatoes into small cubes and pat dry with kitchen paper. Season with salt and put in the oven.
- Roast potatoes for 40-50 minutes until crisp and golden.
- Transfer to a plate and drizzle with some of the sauce.
- Serve hot and don’t forget the “cerveza”*!
