Sauerkraut

The sauerkraut is a traditional Alsatian dish made from fermented white cabbage. It is often accompanied by a dry Alsatian wine or a blond beer.

Recipe of Sauerkraut

Ingredients

  • 1.5kg of sauerkraut cabbage.
  • 1.5 onions.
  • 15 grains of juniper.
  • 3 cloves of garlic.
  • 1 bay leaf.
  • 500g of potato.
  • 500g of smoked roast pork.
  • 500g of frosted bacon.
  • 6 Strasbourg sausages.
  • 37.5cl of white wine.
  • 1.5 tablespoon of oil.

Preparation

  • Rinse the cabbage under cold water and drain it.
  • Pour half of the cabbage into a saucepan, then add the meat and cover with the other half of cabbage.
  • Add the oil, garlic, juniper, bay leaf and onion.
  • Sprinkle with the wine, cover the sauce pan and cook on medium heat for 1 hour.
  • Peel the potatoes and cut them into large pieces.
  • Add the potatoes and continue cooking for 50 minutes.
  • Add the sausages and continue cooking for 10 minutes.
