Today, we present you with the Mofongo Puertoriqueño, an authentic Caribbean dish. Here’s how you do it…
Ingredients
- 4 green plantains
- 6 garlic cloves
- 1 cup (235ml) chicken stock
- 1 red pepper, cut into small pieces
- 1 round tomato, cut into small pieces
- 1 spice of bacon, cooked
- 2 cups olive oil (for frying)
- Salt to taste
- Fried pork skin rinds, also known as chicharrón (optional)
Directions
- Peel plantains and cut into slices (3-5cm).
- Soak them in salty water for 15 minutes and drain them.
- Put oil in a large saucepan and heat to 180°C.
- Add pepper and tomato and cook until they soften.
- Add plantain slices and fry for 7-10 minutes – until light golden, then drain.
- In big bowl, crush garlic cloves with pestle or the back of a spoon and sprinkle with salt and keep pounding until it’s homogeneous. Transfer to a small bowl.
- In the same bowl, crush half of the fried plantain slices with half of the pork rinds, 1/2 slice of cooked bacon, and half of the garlic aioli and pound or smash together.
- Add up to 1/2 cup chicken stock as needed, to make it moist.
- Spoon the mixture and shape into balls.
- Repeat with remaining ingredients and keep it warm oven until ready to serve.
- Top with more crushed chicharrón if you wish.
