Liven up your dishes with Chimichurri

Chimichurri is a classic South American herb sauce and it tastes heavenly. Here’s how you do it…

Ingredients

  • 1/2 cup (120ml) red wine vinegar
  • 1 teaspoon salt
  • 5-6 garlic cloves, thinly sliced or minced
  • 1 bunch flat leaf parsley
  • 1 tablespoon finely chopped fresh oregano or dried oregano
  • 3/4 cup (180ml) extra virgin olive oil
  • 1 teaspoon black pepper

 

Preparation

  1. Combine vinegar, salt, pepper and garlic in a medium bowl and let stand for 10 minutes.
  2. Stir in parsley and oregano and using a fork, whisk in oil.
  3. You can used this sauce for marinade or for table service.
