Banitsa is a delicious traditional Bulgarian dish we can’t wait for you to discover. Here’s our favorite recipe!
Ingredients
- 500g phyllo sheets
- 200g white cheese (“sirene”)
- 100-150g flour
- 500g yogurt
- 3 eggs (medium size)
- 200g oil or melted butter/margarine
- 1/2 teaspoon of baking soda (or 20ml of carbonated mineral water)
Directions
- Preheat oven to 200°C degrees, brush melted butter all over bottom and sides of baking pan.
- Crumble white cheese in small bits.
- In a bowl, mix together eggs, cheese and salt.
- Add half of the yogurt and baking soda to the mixture until you get a homogeneous mixture.
- Put sheets of phyllo dough in buttered pan and brush over with melted butter. Be careful not to make the Banitsa too greasy!
- Pour enough of the egg-cheese filling on each phyllo sheet to cover them and, then roll them one by one and put them in the pan.
- When the pan is filled with the rolls, put the other half of the yogurt on top: spread it with a spoon.
- Bake in the oven for 40 minutes at 200°C.
- When the Banitsa is ready, cover with a cloth or a newspaper for a few minutes and let it cool becore cutting. Serve with a smile!
