Recipe of Cold Zucchini Soup
Ingredients
- 800g of zucchini.
- 1 lemon.
- 1/2 bunch of coriander.
- 2 onions.
- 2 egg yolks.
- 75cl of chicken broth.
- 8 tablespoons of olive oil.
- Salt and pepper.
Preparation
- Peel the onions and slice them.
- Dice the zucchini.
- Heat the broth.
- In a saucepan, put 2 tablespoons of olive oil and cook the onion.
- Add the zucchini. Stir.
- Add salt and pepper. Stir.
- Pour in the broth.
- Leave to cook for 20 minutes over low heat.
- Squeeze the lemon.
- Mix the egg yolks with the lemon and olive oil.
- Blend the zucchini adding the eggs.
- Put in the fridge.
