The sauerkraut is a traditional Alsatian dish made from fermented white cabbage. It is often accompanied by a dry Alsatian wine or a blond beer.
Recipe of Sauerkraut
Ingredients
- 1.5kg of sauerkraut cabbage.
- 1.5 onions.
- 15 grains of juniper.
- 3 cloves of garlic.
- 1 bay leaf.
- 500g of potato.
- 500g of smoked roast pork.
- 500g of frosted bacon.
- 6 Strasbourg sausages.
- 37.5cl of white wine.
- 1.5 tablespoon of oil.
Preparation
- Rinse the cabbage under cold water and drain it.
- Pour half of the cabbage into a saucepan, then add the meat and cover with the other half of cabbage.
- Add the oil, garlic, juniper, bay leaf and onion.
- Sprinkle with the wine, cover the sauce pan and cook on medium heat for 1 hour.
- Peel the potatoes and cut them into large pieces.
- Add the potatoes and continue cooking for 50 minutes.
- Add the sausages and continue cooking for 10 minutes.
