Originally from Sweden, Tunnbrödsrulle is probably the best remedy to the biting Scandinavian winter. Tunnbrödsrulle is a long name for a simple yet sumptuous dish.
Ideal after a night out or the day after a night out… Here’s how you do it…
Ingredients
- 4-8 sausages
- 4 tunnbröd (Swedish thin bread) or flour tortillas
- 1 onion, sliced (or roasted onion flakes)
- Iceberg lettuce
- 100g shrimp salad (recipe: shrimp, mayonnaise, apple and rutabaga)
- Mashed potatoes (3-4 normal size potatoes or 1-2 big ones)
- Ketchup
- Mustard
- Butter (for frying)
Directions
- Slice the onion into rings and then slice the iceberg lettuce.
- The make the potato-mash: peel the potatoes, boil them and let to cool, before smashing them.
- Fry the sausages together with the butter until golden.
- Put 2 or 3 spoons of mashed potatoes on each tunnbröd, and add shrimp salad, lettuce and onion rings.
- Top with 1 or 2 sausages, ketchup and mustard.
