Sweet potato stew spinach and goat cheese

A Dutch recipe for a change. In the Netherlands, we are known for our stews, because it’s almost the only place in the world where you can find it. If you think of stew, you think of the Netherlands. So, let’s introduce the Dutch well-known stew, to Spain.

Ingredients

  •  1 kg of sweet potatoes
  • 200 gr of fresh spinach
  • Lump of butter or margarine
  • 125 gr soft goat’s cheese
  • Handful of walnuts
  • Pepper and salt
  • 6 chipolata sausages

Preparation

Peel the sweet potatoes and cut into large equal pieces. Bring a pot of water to the boil and steam the sweet potatoes for about 15 minutes until tender, you can use a fork to know if the sweet potato is ready.

Meanwhile, fry the sausages in a frying pan with a little bit of butter or margarine. Drain the sweet potato above a bowl so you can collect some of the cooking liquid.

Gently crush the sweet potatoes with a pestle and add a little bit of butter or margarine.

Little by little add some of the cooking liquid until the puree is smooth.

Season with salt and pepper. Add the spinash and combine well until it begins to shrink slightly.

Serve the stew with some goat cheese and nuts and the sausages.
