Israeli Shakshuka

The Shakshuka is a North African dish, especially popular in Israel but that is now made throughout the Middle East.

Shakshuka means « a mixed up », and is composed of eggs, tomatoes, green or red bell peppers, onions. You can choose to add feta or even goat cheese. The dish is sprinkled with spices that makes it really tasty (cumin, paprika, chili pepper or cayenne pepper that you can dose as you please)!

This is an easy, vegetarian, healthy and very tasty dish that can be served as a breakfast, brunch or dinner.

Ingredients (4 persons):

• 1 tbsp olive oil

• 1/2 onion, peeled and diced

• 1 clove garlic, minced

• 1 bell pepper, seeded and chopped

• 4 cups ripe diced tomatoes, or 2 cans (14 oz. each) diced tomatoes

• 2 tbsp tomato paste

• 1 tsp cumin

• 1 tsp paprika

• Pinch of cayenne pepper (optional, for more to taste)

• Salt and pepper

• 6 eggs

• 1/2 tbsp fresh chopped parsley and cilantro

• A few spinach leaves (optional, for garnish)

Instructions :

• Heat olive oil in a large sauté pan on medium heat. Add the chopped bell pepper and onion and cook for 5 minutes or until the onion becomes translucent.

• Add garlic, spices and tomato paste and cook an additional minute.

• Pour the can of tomatoes and juice into the pan. Season with salt and pepper and bring the sauce to a simmer.

• Use your large spoon to make small wells in the sauce and crack the eggs into each well. Cover the pan and cook for 5-8 minutes, or until the eggs are done to your liking.

• Garnish with chopped cilantro and parsley.
