Vegan Chickpea Curry

Looking for a vegan recipe? Spicy and flavoured? Then you are in the right place!

Ingredients

  • Jasmine rice or brown rice (or any rice I like Thaï rice better personally)
  • 1 small onion, chopped
  • 2 carrots
  • Curry powder
  • Coconut milk
  • Vegetable broth
  • Cooked chickpeas (or pre-cooked from a can)
  • Peas
  • Salt and pepper
  • Unsalted cashews (optionnal)
  • Cilantro (optionnal)

Preparation

Prepare the broth by making some water boil and adding a stock cube. Leave it for later.

Cook the rice according to the instructions on the package or as you usually do.

In the mean time, pour some olive oil in a large pan and cook the chopped onion for 2 – 3 minutes. Add the peas, the chopped carrots, the curry powder, chickpeas and the coconut oil and cook for about 20 minutes.

Season with salt, pepper and / or cilantro. And serve with unsalted cashews.
