Recipe of Red Kuri Squash and Potato Soup

Ingredients

  • 1 red kuri squash
  • 2 potatoes
  • 2 chopped garlic cloves
  • 2 chopped onions
  • 10cl of fresh cream
  • 1 bay leaf
  • 1 teaspoon of curry
  • 1 pinch of nutmeg
  • 1 chicken broth cube
  • Salt and pepper

Preparation

  • Remove the seeds and peel the red kuri squash.
  • Cut the squash into pieces.
  • Peel the potatoes and cut them into pieces.
  • In a saucepan, brown onions and garlic with a little butter over low heat.
  • Add the potatoes and the squash and cook for 5 minutes.
  • Cover it all with water and add the cube of broth, curry, nutmeg and bay leaf.
  • Simmer 30 minutes over low heat.
  • Blend everything.
