Recipe of Red Kuri Squash and Potato Soup
Ingredients
- 1 red kuri squash
- 2 potatoes
- 2 chopped garlic cloves
- 2 chopped onions
- 10cl of fresh cream
- 1 bay leaf
- 1 teaspoon of curry
- 1 pinch of nutmeg
- 1 chicken broth cube
- Salt and pepper
Preparation
- Remove the seeds and peel the red kuri squash.
- Cut the squash into pieces.
- Peel the potatoes and cut them into pieces.
- In a saucepan, brown onions and garlic with a little butter over low heat.
- Add the potatoes and the squash and cook for 5 minutes.
- Cover it all with water and add the cube of broth, curry, nutmeg and bay leaf.
- Simmer 30 minutes over low heat.
- Blend everything.
