Recipe of Ratatouille

Ingredients

  • 350g of eggplant.
  • 350g of zucchini.
  • 500g of tomatoes.
  • 350g of bell pepper.
  • 3 cloves of garlic.
  • 6 tablespoons of olive oil.
  • 1 sprig of thyme.
  • 350g of onions.
  • 1 bay leaf.
  • Salt and pepper.

Preparation

  • Cut the tomatoes into quarters. Then the eggplant and zucchini into slices.
  • Cut the bell peppers into strips.
  • Chop the onion.
  • Heat 2 tablespoons of oil in a pan.
  • Cook the onions and bell peppers.
  • Add the tomatoes, chopped garlic, thyme and bay leaf.
  • Simmer 45 minutes.
  • Cook the eggplant and zucchini with the rest of the oil in a pan for 15 minutes.
  • Put the eggplant and zucchini with the tomatoes and cook for 10 minutes over low heat.
