Pamonha

Pamonha is a traditional Brazilian food, a heritage of the Brazilian native people – it’s a paste made from milk and fresh corn, actually very healthy recipe! This dish is similar to the Mexican tamales, really tasty one also. Traditionally Pamonha is served with a black coffee cup, but it can be served at any time – hot, warm or hot, even during a meal. To be more traditional your dish, serve it in corn husks.

Ingredients

  • 4 sweet corn cobs, which I around 400g sweet corn kernels
  • ½ cup cold whole milk
  • 100-150g sugar
  • 1 tablespoon melted butter
  • A pinch of salt

Preparation

  1. Using a sharp knife cut off the end of the cob, and then carefully shucks the corn, taking care to not rip the husks if possible. Clean off the silk threads and then trim them.
  2. Set aside the most beautiful husks to wrap the pamonha.
  3. Remove kernels from the corn cob and blend them with the milk to a paste.
  4. Stir the sugar, salt and melted butter into the corn juice until dissolved. If necessary add more milk.
  5. Wash the corn husks and blanch them in boiling water for a few seconds.
  6. Using a corn cob as a mold, wrap the cob in at least four husks, remove the cob, and tie one end of the package of husks securely with kitchen twine or string (can use also a small strip of corn husk).
  7. Carefully fill each package with the liquid corn mixture and then tie the other end of the package.
  8. Fill a large pot with water and bring it to boil. Lower heat and then place the pamonhas inside (they must be covered with water).
  9. Partially cover the pot and let the pamonhas simmer for 45 minutes, as maximum an hour (until husks turn yellowish).
  10. Drain the pamonhas and serve hot.
