Recipe of Southwestern Corn Tart

Ingredients:

  • Yeasted tart dough
  • 1 tbsp light olive oil
  • 2 jalapeno chilies, thinly sliced
  • 1/2 small red onion, diced
  • Handful of cherry tomatoes
  • 2 cups of corn kernels
  • 1 tbsp marjoram
  • 3 eggs
  • 375ml crème fraîche
  • 2 tbsp chopped coriander
  • 1 oz grated cheddar cheese
  • Salt
  • Cayenne pepper

Procedures:

  • Line the tart pan and put the dough in it
  • Heat the olive oil in a large frying pan and sauté the onion over medium heat with 1/4 tsp salt until soft (3/4 minutes)
  • Add the corn, 1/4 tsp salt, 1/8 tsp cayenne
  • Sauté until the corn is tender (about 5 minutes) and add the tomatoes for the final minute
  • Transfer to a bowl and toss with the jalapeños and herbs. Then, set aside to cool.
  • Preheat the oven to 190 degrees (gas mark 5)
  • In a separate bowl, beat the eggs, add the crème fraîche, along with 1/2 tsp of salt and a pinch cayenne pepper
  • Spread the cheese on the bottom of the tart dough, followed by the corn/onion/tomato mix
  • Pour the custard over and bake for 35 – 40 minutes until the top is golden and the custard is set
