Recipe of Cheddar Cheese Soup
Ingredients:
- Medium sized onion
- Medium sized potato
- 100g carrots
- 25g butter or margarine
- 600ml vegetable stock
- 1 crushed garlic clove
- 1/2 tsp thyme
- 1/2 tsp sage
- 284ml milk
- 175g grated cheddar cheese
- Salt and pepper (to taste)
Procedures:
- Chop the vegetables
- Melt the butter in a large saucepan and sauté the vegetables until the onion is transparent
- Add the stock, garlic and herbs
- Bring to the boil, reduce heat, cover and simmer for 25 minutes
- Add the remaining ingredients, allow to cool slightly, then blend in a liquidizer in small quantities until smooth
- Reheat very carefully to serving temperature
- Do not allow to boil, otherwise the cheese will go stringy
- Adjust seasoning to taste
