Hortobágyi Palacsinta are savory stuffed crepes from Hungary. They’re delicious and today, we’ve decided to share our favorite recipe with you!
Ingredients
For the chicken stew:
- 2 large onions, peeled and chopped
- 2 tablespoon olive oil
- 1 tablespoon Hungarian paprika powder
- 2 tomatoes
- 4 chicken breasts
- 4 chicken thighs
- 1 sweet pepper
- 1 tablespoon marjoram
- Salt
- Pepper
- 300ml sour cream
For the pancakes:
- 200g self-rising flour
- 300ml milk
- 4 eggs
- 150ml sparkling water
- 1 tablespoon oil
- 1 tablespoon sugar
- Pinch of salt
- 1 tablespoon cornflour
Directions
For the chicken stew:
- Cook onions with olive oil in a deep sauce pan until golden brown, then pull aside.
- Gather onions into a pile and sprinkle in paprika powder. Stir well, add 100ml water and put back on the hob.
- Cook for 1 minute, then add chicken breasts, and season with a generous amount of salt and pepper.
- Peel tomato, then chop with sweet pepper into small cubes and add to chicken. Stir well, add 300ml of water, then cover with a lid and cook for 1h on low heat. Make sure the water doesn’t evaporate!
For the pancakes:
- Mix sugar, eggs and a pinch of salt until it becomes whitish.
- Add flour and a bit of milk, and mix well.
- Add rest of the milk and oil and continue mixing with a mixer.
- Gently add the sparkling water and with the help of a spoon, blend into a silky batter (texture should look like single cream).
